This chia pudding is filled with heart-healthy, low-glycemic load foods like cherries, blueberries, almonds, and chia seeds. High-glycemic food may cause your blood sugar to spike and leaves you with that “food coma” feeling after you eat. The sweet and tart cherry chia pudding makes for a delicious breakfast and will help keep your energy steady throughout the day.
Ingredients (serves two)
- 1/2 cup fresh blueberries
- 1/2 cup frozen cherries
- 1/2 cup Vanilla Cashew mylk
- 2 tbsp chia seeds
- 1 tbsp almond butter
Shredded coconut and raspberries
Blend together the cherries, blueberries, cashew mylk, and almond butter and pour the pudding base into two mason jars. Add in the chia seeds and stir so that they are mixed in well. Let the mixture set overnight in the refrigerator. Right before devouring the pudding, top it off with shredded coconut and raspberries. Enjoy!
