Over the next week, I challenge you to try writing a gratitude journal.  I’ll be honest…I have fallen off the wagon on this one.  So, I am going to undertake the challenge with you! It is one of the most incredible tools you can use to create a happier life.  It’s so hard to focus on the positive in our culture.  We are constantly bombarded with shootings, bombings, and acts of hate in the news.  I promise you though, there is good out in the world!

Here’s the way I like to keep my gratitude journal.  First, find an inspiring photo…something that makes you smile.  It might be a picture of nature, a picture of family or friends, a picture of your pet.  It can be your photo or someone else’s.  As long as it makes you smile :) Next, list 3 things you are grateful for.  This can seriously be anything.  And the list can be short and sweet (i.e. I am grateful for: 1) my mom, 2) my dad, 3) my brothers).  As you keep up your journal, you’ll actually want to write more.  You get to use this time to reflect on how wonderful your life is.  And it only takes 5 minutes.  I personally like to write my journal first thing in the morning so I shed a positive light on the rest of the day.

I am grateful for:

1)  All of my kickstarter pledgers.  I would not have been able to open up this new storefront and kitchen without you! Thank you!

2)  Nutty Life.  It makes me smile every day.  It’s challenging and fun!

3)  My family.  They’re so supportive of what I’m doing.  They make me laugh.  They make me smile.  And they challenge my patience ;) I guess that’s what having 4 brothers will do to you though.  JK, kinda…love you John, Ky, Mikey, and Chris!

It's the simple things

Sometimes it’s the simple things in life that satisfy us most—realizing you have more time to sleep, walking past an air-conditioned store front on a hot day, … and this vanilla, cashew, blueberry smoothie bowl. Now, I’m not a professional recipe creator or food photographer so the picture doesn’t exactly depict the most appetizing color for a smoothie, but don’t let that stop you, I promise it’s AH-MAZING! Blueberries are one of nature’s best antioxidants and flax seeds are a rich source of omega-3 fatty acids, both of which are excellent for glowing, healthy skin. 

Worth noting: this recipe has frozen bananas. If you have never frozen bananas before, there are a couple words of wisdom that I will pass on to you after having learned the hard way:

  1. Freeze brown-spotted bananas because they are sweeter and softer than their yellow or green alternative.
  2. Always remove the skin before freezing bananas. The skin will never come off again if they’re frozen, no matter how many times you bang the banana against the counter or try to saw it with a knife.
  3. Cut the bananas into smaller pieces before freezing them because they will blend more quickly.

The portion below serves one but you can always increase the quantity, especially if you have an appetite!

Ingredients

  • 1/2 cup Vanilla Cashew mylk
  • 1/2 cup frozen blueberries (Wyman’s of Maine is my favorite brand)
  • 1 frozen banana
  • 1 tbsp finely ground flax seeds
  • 1 tbsp almond butter or cashew butter

Instructions

Blend together all ingredients in a food processor or blender until creamy and smooth. Enjoy plain or take creative liberty and add your own flare with toppings—we’d love to hear what you come up with!

That’s what my inspiration card for today reads.  And it’s so true.  You can’t wait around hoping that someone is going to drop your dreams in your lap.  You need to dream big & go after what you want.  Life is too short to be unhappy.  Life is too short to go into a job you hate every day. 

After hopping from desk job to desk job unsatisfied and ultimately bored, I knew something had to change.  Quitting your full-time job with benefits and guaranteed pay is scary.  It took me six months to build up the confidence that selling almond milk was a feasible business.  I worked a part-time job with my first boss out of college (who is amazing) until I finally signed a lease at my kitchen.  Every single day is still pretty scary.  I still don’t pay myself and I definitely don’t have paid vacation.  Every time I jet set, that’s time away from the business.  It’s pretty stressful & I usually wake up in the middle of the night thinking of all of the things I need –and want—to do for the business.

That being said, I wouldn’t change a thing.  Creating your own brand is one of the most inspiring and life-changing things you can do.  I learn something new every single day.  I get to be creative, I get to call the shots, and I get to choose the direction in which I want to go.  I don’t have a giant corporation lurking over my shoulder.  I am inspired every single day.  And I can’t wait to get out of bed to work on Nutty Life.  I am so excited to build this brand and bring Nutty Life to people across the country and eventually across the globe.  I envision a Nutty Life office culture of freedom, flexibility, creativity, health, wellness, passion, and inspiration.  One day, we’ll have an office.  After all, you need to dream big.

We are going nuts for this Oh My Chai! almond mylk smoothie bowl. The creamy, rich, frozen yogurt-like texture is the perfect way to stay cool on a hot, summer morning. Not only is this delicious mix a high source of vitamin C, vitamin B6, and potassium, but it also has about 30% of your daily magnesium to help keep your immune system strong, your digestive system active, and your heart healthy. An added bonus? It’s vegan and gluten free… oh, and it will take you less than 10 minutes to make. If you prefer a savory breakfast, try it as a restorative post-workout snack—the potassium helps maintain fluid and electrolyte balance and your muscles will thank you for the protein dose from the almonds and cashews.   

Ingredients

  • 1/2 cup Oh My Chai! almond mylk
  • 1 frozen banana
  • 1 tbsp cacao powder
  • 1 tbsp almond butter
  • 1 tbsp shredded coconut

Toppings

  • 4-5 Strawberries
  • 1/2 cup blueberries
  • 1/8 cup cashews
  • 1 tbsp shredded coconut

Instructions

Blend together all ingredients until creamy and smooth. Pour into a bowl and have fun decorating the smoothie mix with the colorful toppings!

Life is nutty.  It’s a nutty life.  That’s why we’ve created the perfect alternative milk for you.  When it comes to health, we don’t want you to have to think about it.  Nutty Life is the brand you can trust for healthy and wholesome snacks.  Everything made by Nutty Life is organic & additive free.  We sweeten all of our mylks with dates.  We have almond mylk and cashew mylk right now but are always experimenting.  We can’t wait to be settled in our new space so we can really get back to what we love doing – experimenting for hours on end :)

New space!? Yep! That’s right! Nutty Life is moving from our shared kitchen in Malden to our very own space with fellow food entrepreneurs Michelle Wax (Kitchen Millie) & Rita Ng (Boston Bonbon).  It’s in the cutest town right near their movie theater, an ice cream shop, and delicious restaurants – Arlington, MA.  This space will serve as our new commercial kitchen, but there’s an added benefit: we have a small storefront as well! Our store is called The Local Fare & is on schedule to open by mid-July.  We’ll sell our Nutty Life mylks, smoothies, and new vegan “cookie dough” bites as well as Kitchen Millie’s cookies & Boston Bonbon’s French macarons.  We will also stock up on some of our favorite local Boston goodies – bringing the local farmer’s market to the city of Arlington on a daily basis :)

We launched our kickstarter today, June 3rd, which also happens to be founder Caroline’s 28th birthday.  She can’t wait to bring Nutty Life to stores in Boston, New York City, and Washington DC in her next year of life! With the $10k raised through this kickstarter, Caroline will be able to pay for ALL of the equipment in the new space.  It will also allow her to pay for the first couple months of rent.  AND! Sweet Caroline's Go-to Almond Milk Smoothie

When it comes to measuring out what's called for in a recipe, I am not your girl (so my apologies in advance if your smoothie doesn't turn out quite as pretty or as tasty as the one pictured above).  Every time I make a smoothie, I make it a little differently.  Below is my best shot at what's probably in the smoothie above... Nutty Life milks are the only recipes I actually measure out  ; ) As long as you've got some Nutty Life milk in your blender bowl, the smoothie is destined to taste like heaven in your mouth.  So buy some Nutty Life & make the smoothie below!

  • 1 cup (or more) of Nutty Life Oh my CHAI! Almond Milk
  • 1 banana
  • 1/4 cup frozen blueberries
  • 1/4 cup frozen strawberries
  • 1/4 cup frozen spinach and/or kale
  • 1 tsp maca
  • 1 tsp camu
  • 1 tbsp cacao powder or nibs
  • 1 tsp chia seeds
  • 1 tsp flax seeds
  • 1 tsp hemp seeds
